  • Bajan thyme (or regular thyme)1 tsp
  • Bonnet pepper (very finely diced, optional)1/8 tsp
  • Fresh parsley (chopped)1 tbsp
  • Black pepper1/2 tsp
  • Olive oil2 tsp
  • Tomato (sliced, for side salad)1 small
  • Cucumber (sliced, for side salad)1/2 medium
  • Lime juice1 tsp

Steps

  1. Preheat oven to 180°C (350°F).
  2. Peel and dice sweet potato and pumpkin. Slice okra.
  3. In a skillet, heat olive oil and add sweet potato and pumpkin. Sauté 5-6 minutes until slightly softened.
  4. Add okra, spinach, scallions, thyme, parsley, black pepper, and (optional) bonnet pepper. Sauté 2 more minutes.
